Mortimer’s opens, bringing back old-school glamour


There’s a new hotel bar to add to Melbourne’s excellent lineup with the opening of Mortimer’s at Pullman Melbourne Albert Park. Offering a bespoke gin alongside an extensive offering of other gins, spirits, cocktails, and wines, Mortimer’s exudes old-school hotel glamour vibes and is the perfect spot to indulge in a drink or two. Bathed in natural light during the day and enjoying an intimate location by the hotel’s impressive atrium, the inviting leather lounges of Mortimer’s are perfect for settling in for an evening as the sun sets. Refined yet unpretentious, Mortimer’s is a modern take on a gin bar – a welcoming space designed for relaxing, with the bespoke house pour the result of a collaboration with Tiny Bear Distillery.

Possibly the most exciting beverage on the menu is the venue’s signature cocktail, The Cloudy Delight. Floating onto the menu from late November, The Cloudy Delight is a delightful combination of Mortimer’s’ gin, Chambord, Aquafaba, and Parfait Amour blended with sugar syrup and tonic water. Topped with a cloud of fairy floss, the signature cocktail’s light floral fragrance perfectly balances with the light sweetness and adds a fun flourish to the extensive gin menu offered at Mortimer’s.

An extensive wine and cocktail list sits alongside a menu of small plates and substantial bar snacks, ensuring Mortimer’s is the perfect spot for locals and guests alike to linger.

Mortimer’s all day dining menu is available from 11am – 9.30pm; with the bar operating until late.
