Start by brewing a strong cup of rooibos and then letting it cool. Whisk the cooled tea with egg yolks and sugar over a double boiler until the mixture thickens. Fold in whipped cream gently to avoid deflating the mousse. Chill before serving, allowing the rooibos flavour to deepen and develop.
